Volare in Southport secures biggest ever swordfish with 61 kilo delicacy on the menu for diners

THE award-winning Volare restaurant in Southport has just landed its biggest ever swordfish, with the stunning fish now on the menu for delighted diners. 

Volare owner Onofrio Maimone bought the 61 kilos  / 135 lb fish from Fleetwood Fish Market on Wednesday morning, and is already serving it to customers at his restaurant on Lord Street in Southport town centre. 

He said:- “We have secured a 61 kilos  / 135 lb swordfish which was landed off the coast of Spain. It arrived on Wednesday morning from Fleetwood Fish Market. Swordfish is a specialty of my home town in Sicily, Messina. The swordfish is the symbol on our flag! Our team has carved it and we are going to cook it very plain - grilled with olive oil, garlic, lemon juice, and oregano, very simple. It is a really good quality fish. It has quite a meaty texture. It is so fresh! If you are after some fresh fish for the weekend - this is for you! We don’t have swordfish on our main menu, it is something we offer as a special as and when we can secure fresh swordfish from Fleetwood Fish Market. This is the biggest swordfish we have ever seen in all the time Volare has been open in Southport! This is something very special and we know our diners are going to love it. We have an open facing kitchen at Volare so the swordfish has been attracting a lot of attention since the moment we brought it in! This swordfish should last for around 9 or 10 days on our menu, although when it’s gone, it’s gone! We pride ourselves on serving and cooking the very freshest seafood and other food, we have an ever-changing line-up of new dishes on our specials menu.” 

Volare has won a series of awards in recent years for its freshly cooked authentic Sicilian and Italian food. 

Earlier this year, Head Chef Jason Maimone was honoured as the winner of the Up & Coming Chef title at the UK Italian Awards 2026. 

Jason, 35, was awarded the prestigious accolade at the 10th Italian Awards UK Gala Final Dinner at the Marriott Hotel in Mayfair, London. 

Volare was also Highly Recommended in the Best Restaurant in the North West of England category. 

Volare previously won the title of the UK's Best Restaurant at the UK SBA Small Business Awards. 

The Italian Government also honoured Volare for championing authentic Italian cooking in the UK.
